On the back of the box that this adapter comes in it says that this adapter works for the 9MM/.40 Sig P250 Subcompact, but this grip adapter also works perfectly in the Sig P250 in 380ACP.

I have a Sig P250 subcompact in .380 caliber currently with the original 12 round magazines. If I purchase the 15 round .380 magazine intended for the compact model, this will fill the gap and extend my grip, correct?

This adapter is only designed to fill the gap between sub-compact and compact magazines, it is certainly possible it will work but it likely will leave some gaps.
